This simple and delicious gluten-free cherry & chocolate chip loaf is quick to make and yummy to eat!
For this recipe we used:
GF Naturals All Purpose Flour
GF Certified Baking Powder
GF Xanthan Gum
Dried Montgomery Cherries (you can also use fresh or frozen cherries)
Chocolate Chips (I used these Belgian Chocolate chips from Aldi)
Organic Vanilla Extract
Gluten Free Cherry & Chocolate Chip Loaf
This a delicious gluten-free quick bread that is sure to be a hit!
Preheat the oven to 350º F and grease a 9 inch baking pan.
Place the cherries into a bowl and toss with a 1 T of flour. Set aside.
Add these dry ingredients (flour, baking powder, salt, ground nutmeg) to a medium sized mixing bowl and whisk.
In a stand mixer (or a medium bowl with a hand mixer), add the softened butter and beat until fluffy.
Add the sugar to the butter and mix until completely combined.
Add one egg at a time. Then add in the milk and vanilla extract. Mix until just combined.
Fold in chocolate chips and cherries.
Pour batter into the loaf pan and position in the middle of your preheated over. Bake for 50-55 minutes or until the top it golden brown.
Remove from the oven and let cool for at least 1 hour before attempting to remove it from the pan. Slice and serve.
