They are so easy to whip up quickly and most of the ingredients you probably have on hand already. You literally mix it up, drop it in the pan and in 3 minutes you have yourself a tasty meal!
One note: I have tried using a cast iron pan to make crêpes, but they are too heavy for me to lift and tilt to cover the bottom of the pan. So I opted for the non-stick pan because it's so much lighter and easier to maneuver.
To fold or not to fold
Crêpes are fun to serve in different ways; they can be rolled into a long tube and then you can add your toppings. Or you can make one cut and fold into quadrants. Gluten Free Crêpes
An easy, fail-proof gluten-free crêpe recipe for a fun breakfast, brunch or even dinner!
2 cups All Purpose Gluten Free Flour
2 cup milk or dairy free substitute
2 Tablespoon melted butter or alternative
In a medium sized mixing bowl, add all the ingredients and whisk thoroughly to combine. (You can also use a blender and that really helps to remove any lumps of flour that may arise). The batter will be pretty liquid - don't worry that is what you want.
Warm a non-stick 10" pan to medium heat. You can add butter if you'd like but that is optional.
Once the pan is warm enough (too cool and the crepes will crack), take a 1/4 cup measure and scoop up batter. Pour it into the middle of the and immediately pick up the pan to rotate the batter and coat the entire bottom of your pan. Leave to cook for 1-2 minutes.
When it's time to flip you will begin to see golden edges underneath. Turn and allow to cook for another minute.
Remove crepe from pan and apply your desired toppings: lemon & icing sugar, maple syrup, fruit and honey, Nutella, peanut butter or even savory toppings like egg, ham and cheese. You can either roll the crepes or cut a slit from the center to one edge of the crepe and fold into four to make it easier to pick up and eat (perfect for kids!).
